1. Chicken:

Chicken is one of the most widely consumed meats worldwide, and as delicious as it is, it can also pose a significant risk if not cooked thoroughly. The primary culprit behind chicken-related bacterial infections is Salmonella. This bacterium is commonly found in the intestines of poultry and can cause symptoms such as abdominal cramps, diarrhea, and fever. To ensure chicken is safe to eat, it should be cooked until the internal temperature reaches at least 165°F (74°C).

2. Pork:

Pork is a versatile meat used in various cuisines across the globe. However, it can also harbor harmful bacteria if not cooked properly. One of the main bacteria associated with pork is Trichinella spiralis, which causes trichinellosis. This infection can lead to muscle pain, fever, and swelling. To kill any potential bacteria, pork should be cooked to an internal temperature of 145°F (63°C).

3. Ground beef:

Ground beef is a staple in many dishes, including burgers and meatballs. However, it carries a higher risk of bacterial contamination compared to other cuts of meat. Escherichia coli (E.coli) is one of the common bacteria found in ground beef. This bacterium can lead to severe food poisoning, causing symptoms such as abdominal pain, bloody diarrhea, and vomiting. It is essential to cook ground beef thoroughly, ensuring it reaches an internal temperature of at least 160°F (71°C).

4. Lamb:

Lamb meat is enjoyed in various cuisines and is known for its distinct flavor. Similar to other meats, lamb can also carry bacteria that may cause health complications. One such bacteria is Campylobacter, which is often found in the intestines of animals, including lambs. Consuming undercooked lamb can result in Campylobacter infection, leading to symptoms like diarrhea, abdominal pain, and fever. Lamb should be cooked until the internal temperature reaches 145°F (63°C) to eliminate any potential bacteria.

5. Seafood:

Although not categorized as meat, seafood can also harbor bacteria if not cooked properly. Seafood such as fish and shellfish, including oysters, mussels, and clams, can carry Vibrio bacteria. Vibrio infections can cause severe gastrointestinal illness, with symptoms like vomiting, diarrhea, and abdominal pain. To ensure the safety of seafood, it should be cooked until it reaches an internal temperature of 145°F (63°C) or until it becomes opaque and flakes easily.

6. Deli meats:

Deli meats, including ham, roast beef, and turkey, are often consumed without further cooking, such as in sandwiches. However, these meats can carry the bacteria Listeria monocytogenes, which can cause listeriosis. This infection affects primarily pregnant women, newborns, and individuals with weakened immune systems, leading to flu-like symptoms, meningitis, and even miscarriage. Pregnant women and individuals with compromised immune systems should avoid consuming deli meats or heat them until steaming hot before eating.

7. Game meat:

Game meat, such as venison and wild boar, has gained popularity in recent years due to its unique flavors and nutritional value. However, game meat can also carry various bacteria. One prominent bacterium associated with game meat is Toxoplasma gondii. Consuming undercooked game meat infected with Toxoplasma can lead to toxoplasmosis, which may cause flu-like symptoms, muscle aches, and in severe cases, damage to organs like the brain. It is crucial to cook game meat to an internal temperature of at least 145°F (63°C).
